Located in Montilla, Tonelería Juan Pino is a family-owned business with over 50 years of expertise in the artisanal crafting of oak barrels. Founded by Juan Pino, our cooperage has become a leading name in the region, specializing in the manufacture of new oak and sherry-seasoned casks. Today, the second generation, Sergio Pino and Juan José Pino, carries on their father’s legacy of excellence and dedication.
For over 30 years, we have been working with casks for wineries and distilleries, with a particular focus on producing both new and seasoned casks for the maturation of whisky, rum, and other spirits. The majority of our barrels are seasoned in the cellars of Jerez, certified as “Sherry Cask", meeting the demands of the most prestigious distilleries. Proud of our local wines, we also offer seasoning with Fino, Oloroso, Amontillado, and Pedro Ximénez wines from Montilla.
Since our beginnings, we have adapted to market demands while staying true to our core values: quality, craftsmanship, and tradition. Today, our barrels travel worldwide, reaching countries like Scotland, Ireland, Japan, and China, earning us global recognition.

In order to have clear traceability of our products, we assign an ID number to each of our casks that will give information of the type of oak, year of manufacturing, type of seasoning and other specifications for each particular cask.

Each cask will have an ID number where will show the name of the cooperage, year of manufacture, type of oak (American, European or Spanish) and name of the cellar or distillery as well as any other further information requested by the customer. Pedro Ximénez (PX) Sherry Seasoned Cask
Cask seasoned with Pedro Ximénez (PX), a naturally sweet wine made from sun-dried grapes, known for its density and aromatic complexity. The seasoning process is conducted in trusted bodegas in Jerez, under the Regulatory Council’s supervision, ensuring deep wine penetration into the wood.

- Seasoning: Pedro Ximénez, a sweet wine with notes of raisins, figs, and honey
- Available sizes: 200L, 250L, 500L, and custom formats

Amontillado Sherry Seasoned Cask

Cream or Medium Sherry Seasoned Cask
Cask seasoned with Cream or Medium wines, both semi-sweet fortified wines blending Oloroso with PX in varying proportions. While Medium is lighter and more balanced, Cream is richer and sweeter. The seasoning process is done in trusted bodegas in Jerez, under Regulatory Council supervision, ensuring optimal integration of the wine into the wood.

Palo Cortado Sherry Seasoned Cask
Cask seasoned with Palo Cortado, a unique fortified wine that combines the finesse of Amontillado with the structure of Oloroso. The seasoning process is conducted in trusted bodegas in Jerez, under Regulatory Council supervision, ensuring deep wine integration into the wood.

Ex-Red Wine Barrels – 225L
Thanks to our wide network of suppliers, we have access to freshly emptied barrels that previously held red wine in wineries from Rioja and Ribera del Duero.
Characteristics:
- Age: 5-7 years of use in wineries
- Oak types: French or American
- Origin: Selected wineries in Rioja and Ribera del Duero
- Notes of red berries, plums, and blackberries
- Hints of sweet spices, cocoa, and vanilla
- Contributes soft tannins and a silky texture


Ex-Sherry Cask – 500L / 600L
Authentic barrels that have held wine in cellars for decades. For the supply of used casks, we only work with trusted wineries, ensuring reliable traceability for each barrel. Since each batch is unique based on its history, the influence on the spirits may vary.

Our casks are handcrafted to a very high standard.
We manufacture and export our casks to all over the globe, including prestigious
Scottish and Irish distilleries and well known distilleries in Asia, Europe and the
Americas
Raw material
We use Spanish oak from Galicia, Asturias and Cantabria, European oak and American oak.
Drying
We receive the oak while it is still green and air-dry it for at least 18 months in the yard of our cooperage. Thanks to our location in the heart of Andalusia, the process takes place under ideal climate conditions.
Toasting
The toasting level can be chosen according to the requirements of each customer.
Bending
We do not use any type of chemical fuel. We only use excess pieces of oak to feed the fire in the making of our casks.
Seasoning
To season our casks, we work with many prestigious cellars. The casks can be seasoned with different sherry types such as Oloroso, Fino, Manzanilla, Amontillado, Pedro Ximenez or Moscatel.
Quality
The whole process is supervised by our master coopers who submit the casks to air and water tightness proof tests and ensure they are made to the highest standards.
Adaptability
All our products are tailored to the needs of each customer, whose requirements on type of oak, toasting, sherry and seasoning period are all catered for.
Traceability
For each barrel we can provide full information regarding its seasoning specifications, type of wood and its origin, production timelines etc.
